Wonton Wrapper Cheese Sticks

These are the most amazing snack, super low points (1pp a piece) and easy to cook!

Wonton Wrapper Cheese Sticks

  • 18 wonton wrappers
  • 1 tbl olive oil
  • 6 mozzarella string cheese (cut into thirds)
  1. 1. Cut string cheese into thirds
  2. Rub olive oil over wonton wrapper
  3. Wrap up cheese stick in wonton wrapper
  4. To close wrap rub olive oil to seal
  5. Cook in George Foreman until brown on the outside

No-Carb Pizza

I found this recipe on pinterest and knew I had to try it!! Thank you What's That Smell for making this incredible NO-CARB pizza for 2pp!!

No-Carb Pizza

To get it to 2pp a piece you must cut it into 24 pieces. That seems like super small pieces (and it sorta is) but when I had 8 piece (16pps total) I was STUFFED! Because there are no empty calorie carbs you get full quick, and I stayed full most of the night!!

The crust was amazing! A few pieces were a little soft but it tasted like crust otherwise!

Walking in the grocery store #nsv

I'm going to admit to something that I'm ashamed of, for the past 9 months I have not walked through a grocery store, I've had to use the motorized carts because of my back and my legs. Today, I walked! It's a #nonscalevictory for sure, I'm tired and a little sore, but I did it. So after I treated myself to a large soda because what else can you buy for $1, and it might seem backwards, but the diet soda costs 0 points (yes I am educated on artificial sweeteners, I still choose them), and I deserved it. So today I counted all my points, am currently making my healthy dinner, I did a 30 min workout AND walked through the grocery store only buying healthy things. It's about the little things, and my journey looks like me, 100%! "Progress not Perfection."

I needed to make this printable to help me track my water. For me, just beginning in my weight loss journey, I only have 8 oz as my serving size but I allowed it to be changed so you can go down or up in serving sizes based on what you drink. Hope you enjoy :))

Weight Watchers: Bacon Breakfast Burrito

Weight Watchers Bacon Breakfast Burrito
4 pts

6 slices turkey bacon
2 cups cooked egg beaters
6 carb friendly flour tortillas
1/2 cup shredded cheese
1. Cook egg beaters in skillet.
2. While they're cooking I bake my turkey bacon in the over, Oscar Meyer's is already pre-cooked so I only wait until it's crispy
3. Begin assembling the burritos. 2 cups of egg beaters might be too much but I use it to fill me.
4. Refrigerate until use. I only make 6 at a time so they don't go bad

Weight Watchers Taco Bake

 6 points plus

1 lb lean ground turkey
1 package low sodium taco seasoning
6 carb friendly flour tortillas
2-3 cups low fat/fat free shredded mexican cheese
Fat Free Sour Cream
Taco Sauce
6 carb friendly flour tortillas Optional: Refried beans (mix in with the layers)
Lettuce & Diced Tomato (on top)
1. Preheat oven 350 degrees
2. Brown ground beef. Add taco seasoning and some water (I eyeball it). You’ll need the taco liquid to add to the dish.
3. As it’s preparing use 6 tortilla shells and spread a thin layer of sour cream on each.
4. Layer (In Casserole Dish): Flour tortilla w/ sour cream, ground beef w/ taco seasoning, cheese, and taco sauce. Repeat. Use all ground beef in the first two layers, last layer only have cheese. You will have three layers. Poor taco sauce (from skillet) over the whole mixture.
5. Bake for 10-15 min or until all layers of cheese is melted.
-All (amount) of cheese is NOT necessary, I like cheese.
-I tend to like less meat then Joshua so I tend to add A LOT more meat to his side then to mine.

Setbacks, Honesty and Changes

Since starting my weight loss journey about 10 weeks ago I have experienced the highs and the lows of weight loss. At about week eight when I posted  Apparently I'm Motivated I had just began to get this terrible, back pain. So beginning that week I didn't go to the gym like I should have, it didn't help that the scale was just going up and not down. So for week eight and week nine I just sat at home, truly missing working out but lacking all motivation to continue. So with the scale going up and I don't mean by a pound or two but by a whole 10 lbs, being out of my routine, having job issues and stresses, I just didn't go to the gym.

I am an overeater, I don't just eat pizza, I eat a pie of pizza. I don't just sit down and have a meal and then wait for the next, I eat another meal 2 hours later. I would love to blame statistics and tell you that because food releases dopamine, that it makes sense, but that wouldn't be honest. I eat because I'm bored, lonely, angry, sad, frustrated, and any negative emotion under the sun; but that's not where I do the MOST damage. I eat to reward myself for a good workout, or for cleaning, or anything really that needs a celebration. I've done it for years. I get food when I feel good. So no matter if I'm happy or sad, I get food. Unlike sad food, I hope that I spend more of my life happy then sad, so I end up eating MORE when I'm happy, because I buy bigger and better food.
How many of you out there use food as your reward system? I know I didn't want to admit it, because that's the first step, the next is figuring out what to do about it.

How do I, as a twenty-three year old, rewrite the reward system in place in my brain? How do I overcome something that feels so good? I may sound like a drug addict or an alcoholic but I can't go cold turkey off food. I can't just give up on food. So how do I begin to rewire myself so that food doesn't hold that over me.
I begin by NOT changing the reward system and instead subsituting. Denial of food and huge changes of the reward system will come, I'm not saying they won't but right now to make the leap from incredibly fattening, junk food to something else is a huge step, and one so big I might not succeed. So instead I'm going to portion out yummy healthy foods. Graham crackers and peanut butter, chocolate yogurt covered raisins, cashews, yogurt, frozen grapes, portion size of crackers or chips; not the whole bag of chips or raisins or cashews, but a portion. Now when I do good I get those, specifically the raisins and the chips. I get those no other time so it's a true reward.
How else can I change? By starting two very important routines.
Food training, no I'm not talking about eating competitions and training for that. If you've ever had a child and sleep trained them it's very similar and something I had to do for myself with sleep. So when I sit down to eat, I'm only allowed to eat at the kitchen table, with a specific plate, or plates that all look the same, place mat, glass and silverware. Even if I sit down for my reward of 10 chocolate covered raisins, I eat them there. No distractions of tv or computers or anything, just me and the food. Do I love food enough to spend a lot of time alone with it?
Recording, it seems so basic to record your food, but it's a routine I've yet to start. I don't track what I eat, so I'm going to start. Even if what I put in there is complete crap, I'm going to put it in so I can begin being held accountable for what I'm eating. Makes sense right? From this I'm then going to start looking into weight watchers so that I could possibly just move right into their etools.

If you're reading this and you're like, "Abbi, those aren't real changes". You're wrong, sorry. They're not taking away food, they're not starving myself or working out more. They're simple huge changes that will effect how I eat and what I eat. If I start making better choices food wise, the healthier I'll be.
One day I'll cut down on carbs and eat better forms of protein and more complex carbs, but for right not those are big words with big commitments and not only do I not have a routine established I'm not ready because I haven't taken the first steps yet!

Apparently I'm "motivated"

Fat Crying!
Let me tell you a little bit about a weight loss journal done my way! I go to the gym between 3-4 times a week, it's not for an extremely long time but it's no less me going and being consistent. Everyday I go I find my escape, from the pressures and stresses of everyday life. I don't think about my husband, I don't think about my parents, I don't think about being jobless, broke, or what tasks I need to accomplish. For the brief 30-45 minutes that I'm pumping away at a machine, it's me and my FAT! Yeah you heard me, my fat! 

I'll tell anyone out there I earned this fat and I didn't do it by accident, and I put a lot of work into it. Guess what the pizza doesn't just float into your mouth. Does that mean I have a handle on it, does it mean I like what it's done to my life? NO WAY! If I could somehow be fat and it not effect my life do you think i'd be changing it?? HELL NO! My husband loves my curves and hell I like having big boobs, but I don't like what it does to my life. So before you judge the girl that shoves the food in her mouth because she's hurting so much inside that she feels empty and literally just wants to feel something even if it's full; realize what she is losing. She's scared to get on airplane, she's scared to go clothes shopping, she needs a breather while walking through the grocery store, if not a sit down; she feels vulnerable in front of the one person who sees her naked; and most of all she looks in the mirror everyday hates herself for what she eats but just wants to feel something. I'm not every fat girl, but I'm me, and that's what I face daily.

Now I'm about one of the most candid fat girls out there, most girls won't talk about this except with other fat girls, why because it's embarrassing and no one will understand without saying well just lose the weight. Thanks Captain Obvious. I'm slowly realizing just how much my honesty can help people, and how my openness about the hard parts of life can impact others. No one can imagine how humbled and honestly speechless I am (though clearly not enough to keep from writing this), so whoever you are Anonymous, you have shocked and awed me; you've also inspired me to blog more about my weight loss and my struggles. 

Week 2, Week 6 and Week 7
To all the fat girls out there, I have a message for you: please stop, stopping yourself. I know it's embarrassing to get in a swim suit, I know when the scale goes up you want to cry, I know, but I've gained 10 lbs since I started working out 8 weeks ago! 10 EFFIN POUNDS!! Yeah, yeah muscle my butt, I've been eating more saying that "ohhhh I worked out time for protein," but that one healthy meal of protein becomes "ohhh pizza!" Can you tell what my favorite food is yet? Fat girls everywhere, please look in the mirror and pick apart the pieces of yourself that you love, find them, you have them and focus on those because guess what if it's anything like my list those are things that won't change once you loose weight. Next time you're at the gym find a good song (I'm including shots of my playlist at the bottom) and make your fat cry!! Please! Honor your curves but make your fat cry!! 
Since working out I've accounted for every little victory possible, why because that scale effin sucks!

L: pb&j, serving size of chips (12 chips), can of soda
D: Cookout

B: Protein Shake (for me) Josh doesn't normally eat breakfast so I don't normally factor him in.
L: Turkey Sandwich and salad Aldi sells a bag of three Romaine lettuce heads for about $3! Score!
D: Sausage & Potatoes (recipe) Clearly a favorite of ours

B: Egg Sandwich
L: Flatbread Pizza [homemade sauce (recipe)] The flatbread I cannot find at aldi so when I make my kroger run for turkey I pick up flatbread!
D: Spaghetti and Garlic Knots (recipe) Again it's not that healthy so on meals like this I work on portion control!

B: Protein Shake I work out M W F so this is the breakfast of champions!
L: Tuna Salad & Plain chips For a little salt and instead of a sandwich I use the tuna salad as a chip dip! So yummy!
D: Homemade Tuna Helper (recipe) We both agreed that this is something we probably won't try again, but I'll post the recipe because it wasn't terrible just not a favorite!

B: Eggs & Toast I'm pretty famous for just cracking two eggs, scramble and add cheese! Its a bit of time but it's soooo yummy!
L: Grilled cheese and tomato basil soup (recipe)! Not as healthy as it could be but I had so much soup leftover!
D: Chicken and rice I'll share my secret to amazing, falling-apart, moist chicken (recipe) you can have with anything including salads!

B: Protein Shake I LOVE my protein powder, when mixed with milk tastes like a Wendy's frosty!
L: Flatbread pizza For the flatbread pizza I use the homemade sauce, four pepperonis, a slice of mozzarella cheese (to control portion size) and bake at 400 for 7 minutes
D: Tacos**

**For all these meals I substituted ground beef for ground turkey. We found ground turkey for $1.69 a pound (in 1 pound rolls) at Aldi! I was shocked!

Stop Hating Your Body

Please go read The Body Love Blog it is amazing! Stella Boonshoft who is the author is in love with her body, and it's not because she is a size 1, but because her body helps her love others. She is truly an inspiration. 

After reading this blog, I broke down in tears realizing how long I have truly HATED by body. Hated that it's ugly, that I have overly read cheeks, that my hair does nothing but straight, that I have fat thighs, that my stomach is disgusting, that my arms require shirts to cover them, that my weight has taken away my dream of children! I have done some serious hate on ME!

^See my hair, people love my hair, I LOVE my hair
^See my face, "Oh you have such a pretty face" what about the rest of me?
^See my legs they allow me to stand upright. People without legs would love to have them back so why don't I LOVE mine?
^See my eyes? I have my dad's eyes, the most beautiful color I could ask for and it helps me see hurt and emotion and it helps me read people and LOVE them!

This is crazy because I know my God created me perfect, I know that what my parents made wasn't junk. I could sit and tell you how wonderful the bits of my parents personality that came to me are wonderful, but my dad's blue eyes & his fair/fine hair; my mom's hair thickness and her face shape, my gram's nose, my dad's toes, what are those just pieces of the junk, just points of reference when I hate the rest of my body? SO I'M DONE WITH SELF-HATRED, WITH LOOKING IN THE MIRROR AND HATING IT! I'M DONE WONDERING IF PEOPLE THINK I'M UGLY OR IF THEY MOCK ME BECAUSE OF MY WEIGHT! YOU DON'T KNOW MY STORY, YOU DON'T KNOW WHAT I'VE BEEN THROUGH. I'M ALSO DONE WITH PEOPLE WHO ARE CONCERNED ABOUT MY WEIGHT, IT'S MY BODY AND WHETHER I CHOOSE TO EAT DORITOS ALL DAY OR APPLES IS MY OWN CHOICE.

However, I do plan on loving my body and because of that love, I plan on treating it like I love it. I'm going to start honoring the vessel/temple that is my body, because lets face it very few of us do that. If you loved your body you would put the right things in it, you would do the right things for it, but when you wanted something (ice cream & pizza) you would give it that, always in moderation. 

So i'm DONE! I'm done with self-hatred, because I am a big girl, with a big body and you can never hate my body anymore because I have hated it more then you ever could but because I'm DONE hating it!
