Recipe: Easy-Peasy Chicken Dumplings

Easy-Peasy Chicken Dumplings

Easy-Peasy Chicken Dumplings

-2 boneless skinless chicken breasts (clearly only two of us)
-1 can cream of chicken (originally called for two, but I don't like all the additional cream)
-3 bullion cubes
-3 cups of water (for chicken broth)
-2 large potatoes, cubed
-2 handfuls of baby carrots (or cut up large carrot)
-4 refrigerated biscuits, torn up
-dash of garlic powder, rosemary, parsley, and oregano (flavor to liking)
1. Place chicken (on bottom), cream of chicken, 3 cups of chicken broth, potatoes, carrots in crockpot. Making sure all ingredients are covered for the most part.
2. Cook on low 6-8 hours or high 3-4 hours
3. 45 minutes before serving tear up biscuits & continue cooking

This recipe yielding more then I imagined, this is my largest tupperware container, and that was just with 2 chicken breasts. Clearly this recipe can be doubled easily, using more potatoes, carrots and chicken breasts. Make sure to cover with chicken broth.

This recipe was truly delicious, especially once the spices were thrown in, Josh says it's in his Top 10!  Enjoy!

  1. Thank you Abbi, we have been struggling with money and each day we seem to go to the store for dinner. I decided to try your meals and tonight is the Au Gratin Potatoes with ham and tomorrow is chicken & dumplings.

    Sincerely, Lori

  2. Thanks for the meal ideas! So far I'm definitely adding sour cream noodle bake and chicken& dumplings to my menu plan!
